Delightfully crispy on the outside and fluffy on the inside, Persian Barbari bread is the perfect flatbread to toast and eat with cheese and jam for breakfast, or as a side for lunch and dinner.

Ingredients


For the dough
  • 1 packet (about 7 gram) active dry yeast
  • 1⅓ cups tepid water
  • 1 tsp sugar
  • 4 cups all purpose flour, plus more for kneading
  • 1 tbsp extra virgin olive oil
  • 2 tsp kosher salt
For the glaze and topping
  • 1 tbsp all purpose flour
  • ½ tsp baking powder
  • cups water
  • 1 tsp extra virgin olive oil
  • Nigella and sesame seeds, for garnish
