This fairly fiery dish is laced with the powerful flavours and aromas of ras el hanout, a traditional spice mix.

Ingredients

  • 2 tbsp ghee or olive oil
  • a large thumb-sized piece of fresh ginger, peeled and finely shredded
  • 4 onion, finely chopped
  • 4 kg lean beef, cubed
  • 1-2 tsp ras el hanout
  • 2 medium sweet potatoes, peeled and cubed
  • sea salt and freshly ground black pepper
  • 500 g shelled fresh peas or frozen peas
  • 2-3 tomatoes, skinned, deseeded and chopped
  • 1 preserved lemon, finely shredded or chopped
  • a small bunch of fresh coriander leaves, finely chopped
