Cider pork & bacon pie with cauliflower and potato mash

This is a good, everyday pie, using pork mince, which is slightly less expensive than lamb or beef. Gluten-free: use gluten-free plain flour in the sauce.
Ingredients

potatoes , peeled and cut into 2 cm chunks

cauliflower , cut into small pieces

leeks , sliced

plain flour

cider

Instructions
Preheat the oven to 200 °C /gas 7 . Grease a large casserole dish.
Put the potatoes and the cauliflower in a saucepan of boiling water. Bring to the boil and then turn down to simmer for 10 minutes . Drain and return to the ban. Add the cheese and mustard and mash together.
Meanwhile, fry the bacon in a large frying pan until it is crispy. Remove from the pan and cut into small pieces.
In the same frying pan, fry the onions until they become soft. Add the mince and fry until it is no longer pink.
Add the leeks and fry for 2 minutes . Add the flour and stir well.
Add the cider and the stock cube . Mix together, bring to the boil and season. Add the chopped bacon and pour into the casserole dish.
Put the mash on top. Place in the oven for 25-30 minutes , or until the top is browned.
