Coconut cod with lemon sauce and broccoli mash

peeled and cut into 2 cm chunks

broccoli

stalk chopped and head cut into florets

defrosted frozen peas

dessicated coconut
oil to fry
juice of a lemon

light brown sugar

Put the
potatoes
and
broccoli
stalks into a pan of boiling
water
, bring to the boil then turn down to simmer for
5
minutes
. Add the
broccoli
florets and
peas
and simmer for a further
5
minutes
. Drain and mash roughly with the
butter
.
Dip the
cod fillets
in the
beaten egg
and then into the coconut. Heat the oil in a frying pan and cook the cod, on a medium heat until the fish is browned on the outside and cooked through. Should take about
5
minutes
, depending on the thickness of the fish.
Remove the fish from the pan and add the sauce ingredients. Allow to simmer for
2
minutes
. The sauce should thicken slightly.
Serve with the fish and the mash.
