Madeira sponge makes the base of this zesty festive trifle

Ingredients


For the lime custard
  • zest of 4 and juice of 8 limes
  • 4 large egg yolks
  • 4 tbsp caster sugar
  • tbsp cornflour
  • 450 ml whipping cream
For the cream
  • 450 ml whipping cream
  • tbsp icing sugar
  • 2 tbsp Malibu (or ½ tbsp white rum)
  • 1 tsp vanilla bean paste or extract
