- 455 g extra lean beef mince
- 1 medium onion, finely diced
- 180 ml passata
- 1 red pepper, diced
- 1 green pepper, diced
- 175 g frozen sweetcorn
- 180 g uncooked long-grain rice
- 600 ml water or stock
- 4 spring onions, diced
- 4-6 tbsp quark
- 120 g cheddar cheese, grated
For the taco seasoning
- 1½ tsp cumin
- 1½ tsp paprika
- 1½ tsp chilli powder
- ½ tsp oregano
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp cayenne pepper (can add more or less depending on your preferred spice level)
