  • 455 g extra lean beef mince
  • 1 medium onion, finely diced
  • 180 ml passata
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 175 g frozen sweetcorn
  • 180 g uncooked long-grain rice
  • 600 ml water or stock
  • 4 spring onions, diced
  • 4-6 tbsp quark
  • 120 g cheddar cheese, grated
For the taco seasoning
  • tsp cumin
  • tsp paprika
  • tsp chilli powder
  • ½ tsp oregano
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp cayenne pepper (can add more or less depending on your preferred spice level)
