Salmon and broccoli pot pies


These mouthwatering pies are quick and simple to make, but oh-so-delicious.

Ingredients

  • 2 leeks, trimmed and washed well to remove any grit
  • 25 g butter
  • 200 g Tenderstem broccoli, trimmed
  • 100 g frozen peas
  • 4 tbsp plain flour, plus extra for dusting
  • 400 ml whole milk
  • 4 skinless Scottish salmon fillets, cut into 3 cm chunks
  • 4 tbsp light creme fraiche
  • finely grated zest of 0.5 lemon
  • 1x 32x 320 g Jus-Rol puff pastry sheet
  • 1 egg, beaten
