Salmon and spring veg orzo


Use orzo or your favourite small pasta to make this speedy salmon supper for midweek

  • 750 ml vegetable stock
  • 1x 240 g pack salmon fillets
  • 2 lemons
  • 250 g dried orzo (or other small pasta)
  • 1x 200 g pack Tenderstem broccoli, roughly chopped
  • 1x 200 g pack sugar snap peas, halved on the diagonal
  • 2 tbsp olive oil
  • 1 tbsp clear honey
  • handful of fresh herbs, finely chopped (we used dill, parsley and chives)
  • 60 g soft goat's cheese, crumbled
