For the sponge cake
- 400 g gluten free self raising flour
- ¼ tsp xanthan gum
- 400 g dairy free spread (butter at room temperature works if you don't need to be dairy free)
- 350 g caster sugar
- 2 tsp vanilla extract
- 6 eggs
For the icing
- 400 g icing sugar
- 1 tsp vanilla extract
- a few tbsp water
- colour strands decorations
