Ingredients
- 6 oz hard Spanish Chorizo, sliced into thin rounds
- Extra virgin olive oil
- 1 small yellow onion, thinly sliced
- 3 cloves garlic, finally chopped
- 2 jalapeno peppers, chopped
- 1¼ tsps turmeric
- 1¼ tsps paprika
- 1¼ tsps ground cumin
- Salt
- 1½ lbs large shrimp (prawns), peeled, deviened and well-rinsed
- 1¼ cups couscous
- Boiling water
- 1 cup fresh parsley, chopped, stems removed
