  • 6 oz hard Spanish Chorizo, sliced into thin rounds
  • Extra virgin olive oil
  • 1 small yellow onion, thinly sliced
  • 3 cloves garlic, finally chopped
  • 2 jalapeno peppers, chopped
  • tsps turmeric
  • tsps paprika
  • tsps ground cumin
  • Salt
  • lbs large shrimp (prawns), peeled, deviened and well-rinsed
  • cups couscous
  • Boiling water
  • 1 cup fresh parsley, chopped, stems removed
