Instructions
To make the burger patties, put the beef mince , panko breadcrumbs , garlic granules , onion granules , mustard powder , paprika and BBQ seasoning in a mixing bowl and mix with clean hands until well combined.
Divide into 4 equal portions and shape into 4 burger patties. Set aside. At this point, the patties can be frozen if you wish (or they can be frozen once cooked). Wrap each patty individually, then place in a freezerproof container. Defrost overnight in the fridge before reheating cooked patties in the microwave until piping hot or cooking raw patties in a frying pan.
To make the pineapple salsa, spray a small frying pan with low-calorie cooking spray and place over a medium heat. Add the pineapple and green pepper and fry for 4 minutes until softened slightly, then add the sweet chilli sauce , lime juice and soy sauce . Stir to combine and set aside.
Spray a clean frying pan with low-calorie cooking spray and place over a medium heat. Add the burger patties and fry for 4-5 minutes on each side or until cooked through.
While the burger patties are cooking, make the sweet chilli mayo. In a small bowl, mix the mayonnaise , sweet chilli sauce , lime juice and sriracha sauce until combined.
Once the burgers are cooked, turn off the heat. Add half a cheese slice to the top of each one and leave to melt.
Toast the inside of the burger buns . Spread the bottom half of each bun with a little of the sweet chilli mayo. Add some lettuce leaves , a burger patty with cheese on, some sliced tomato then pile on the pineapple salsa. Finish with a little more of the sweet chilli mayo and serve.
