Beef strips with orange and ginger

Ingredients
- 450 g lean beef steak, cut into thin strips
- grated rind and juice of 1 orange
- 15 ml light soy sauce
- 1 tsp cornflour
- 2½ cm piece fresh root ginger, finely chopped
- 15 ml sunflower oil
- 1 large carrot, cut into thin strips
- 2 spring onions, thinly sliced
- noodles or rice, to serve
