Chicken, ginger & green bean hotpot

  • ½ tbsp vegetable oil
  • 2 cm knob of ginger, peeled and cut into matchsticks
  • 1 clove garlic, chopped
  • ½ onion, thinly sliced into half moons
  • 1 tbsp Thai fish sauce
  • ½ tbsp soft brown sugar
  • 250 g skinless boneless chicken thighs, trimmed of all fat and cut in half
  • 125 ml chicken stock
  • 50 g green beans, trimmed and cut into 2.5 cm lengths
  • 1 tbsp coriander leaf, chopped
  • steamed rice, to serve
