Chicken, ginger & green bean hotpot

Ingredients
- ½ tbsp vegetable oil
- 2 cm knob of ginger, peeled and cut into matchsticks
- 1 clove garlic, chopped
- ½ onion, thinly sliced into half moons
- 1 tbsp Thai fish sauce
- ½ tbsp soft brown sugar
- 250 g skinless boneless chicken thighs, trimmed of all fat and cut in half
- 125 ml chicken stock
- 50 g green beans, trimmed and cut into 2.5 cm lengths
- 1 tbsp coriander leaf, chopped
- steamed rice, to serve
