Fragrant rice with chilli vegetables


Simple ingredients are given a flavour with fresh-tasting lemongrass, coriander and the fiery heat of chopped chilli.

  • 1 stalk lemongrass, finely chopped
  • 175 g mangetout, halved lengthways
  • 175 g baby sweetcorn, halved lengthways
  • 2 tomatoes, roughly chopped
  • 25 g coriander leaves, finely chopped
  • 25 g desiccated coconut, lightly toasted
  • 1 red chilli, deseeded and finely chopped
  • 1 tbsp light soy sauce
  • coriander sprigs, to garnish
