Fragrant rice with chilli vegetables
Simple ingredients are given a flavour with fresh-tasting lemongrass, coriander and the fiery heat of chopped chilli.

- 225 g jasmine or Thai rice
- 1 stalk lemongrass, finely chopped
- 175 g mangetout, halved lengthways
- 175 g baby sweetcorn, halved lengthways
- 2 tomatoes, roughly chopped
- 25 g coriander leaves, finely chopped
- 25 g desiccated coconut, lightly toasted
- 1 red chilli, deseeded and finely chopped
- 1 tbsp light soy sauce
- coriander sprigs, to garnish
