  • 2 tbsp olive oil
  • 2 chicken thighs, skin on and bone in
  • 1 large onion, cut into 1 cm dice
  • 4 cloves garlic, crushed
  • 2 tbsp picked thyme leaves
  • 3 tbsp tomato paste
  • 250 g dried spaghetti, broken into thirds
  • 20 g Parmesan, finely grated
  • 20 g fresh breadcrumbs, finely blitzed
  • 10 g parsley, finely chopped
  • tsp finely grated lemon zest
  • salt and black pepper
