Ingredients

  • 1 tbsp vegetable oil
  • 1 shallot, sliced
  • 1 carrot, cut into matchsticks
  • 1 small courgette, cut into matchsticks
  • 5 g chunk of fresh root ginger, peeled and finely chopped
  • 1 red chilli, deseeded and sliced
  • 2 cloves garlic, sliced
  • 100 g shelled raw tiger prawns, roughly chopped
  • 100 g bean sprouts
  • oil, for spraying
  • 4 eggs
  • salt and pepper
  • 1 tsp tamarind paste
  • 1 tbsp fish sauce
  • 1 tsp caster sugar
  • ¼ tsp shrimp paste (optional)
  • 2 spring onions, shredded
  • handful coriander, chopped
  • 1 tsp finely chopped peanuts
