Pork patties with chilli dipping sauce

1. In a small saucepan, mix the cornflour with the water. Add the rest of the dipping sauce ingredients and bring to the boil, stirring frequently. Turn down the heat and simmer for
   1-2 minutes. Leave to cool.
2. Make the pilau rice.
3. Mix together the patty ingredients, use your hand to create a smooth paste. Form into small patties, making them quite flat so they are easier to cook. The mixture should make about 12.
4. Heat the oil in a frying pan. Once the oil is hot, add the patties. Cook on a medium/high heat for
   2-3 minutes each side.
5. Serve with the rice, cucumber and dipping sauce.
