A cheap and economical Thai curry. The root veg have a sweet taste that benefits from a little spice.

  • 1 tbsp olive oil
  • 50 g Thai curry paste (green or red)
  • 750 g mixed root vegetables (such as carrot, swede, turnip), peeled and chopped
  • 160 ml coconut cream (or 75 g creamed coconut, broken into pieces)
  • 750 ml vegetable stock, made from stock cube
  • 200 g rice
  • salt and black pepper
