Spiced mushroom & lentil hotpot

  • 300 g mini Portobello mushrooms or chestnut mushrooms, sliced
  • 2 cloves garlic, crushed
  • tsp ground cumin
  • 1 tsp smoked paprika
  • 2x 400 g cans green lentils, drained and rinsed, drained weight
  • 1 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 medium sweet potato, peeled and very thinly sliced
  • 1 large potato, very thinly sliced
  • 1 sprig thyme, leaves picked
