Spiced mushroom & lentil hotpot

- 1 medium onion, sliced
- 300 g mini Portobello mushrooms or chestnut mushrooms, sliced
- 2 cloves garlic, crushed
- 1½ tsp ground cumin
- 1 tsp smoked paprika
- 2x 400 g cans green lentils, drained and rinsed, drained weight
- 1 tbsp soy sauce
- 1 tbsp balsamic vinegar
- 1 medium sweet potato, peeled and very thinly sliced
- 1 large potato, very thinly sliced
- 1 sprig thyme, leaves picked
