Superhealthy pizza
Homemade pizza is easier to make than you think and needn't be loaded with fat. The portions are quite generous, so any lefovers can be enjoyed cold for lunch the next day.

Ingredients
- 200 g flour, half strong white flour, half wholewheat flour
- 7 g sachet fast-action dried yeast
- 125 ml warm water
For the topping
- 200 g can chopped tomatoes, juice drained
- handful cherry tomatoes, halved
- 1 large courgette, thinly sliced using a peeler
- 25 g mozzarella, torn into pieces
- 1 tsp capers
- 8 pitted olives, roughly chopped
- 1 clove garlic, finely chopped
- 1 tbsp olive oil
- 2 tbsp chopped parsley (optional)
