AsianSweet and sour tofu stir fry


The sweet and sour stir fry has become a very well known westernized Cantonese dish, which is especially popular when ordering take-out. It is quick and very easy to make, so especially good after a long and busy day.

Ingredients

Tofu
  • 450 g block extra firm tofu, cut into 0.5 inch cubes
  • 2 tbsp soy sauce
  • 30 g cornstarch
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp vegetable oil
Sweet & sour sauce
  • 120 ml pineapple juice, from a can of pineapple chunks
  • 60 ml rice vinegar
  • 55 g tomato paste
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 2 cloves garlic
  • 2 tsp cornstarch
  • 1 tsp freshly grated ginger
Stir fry
  • 285 g rice, washed, drained
  • 2 tsp vegetable oil
  • 1 medium red onion, thinly sliced
  • 1 large carrot, finely chopped
  • 1 red bell pepper, thinly sliced
  • 100 g canned pineapple chunks
