sweet chilli sauce

mirin or white wine vinegar
juice of 2 limes

cut into thin strips

basmati rice

mangetout

cut into thin strips

olive oil

fat red chilli

chopped

Mix together the sauce ingredients. Add the
chicken
strips and leave for
5
minutes
.
Meanwhile, put the
rice
on to cook. Once it's cooked, put the
mangetout
on top and replace pan lid. The
mangetout
will cook in the heat from the
rice
.
Heat the
oil
in a large frying pan or wok. Add the
chicken
but not the sauce. Fry on a medium heat until the
chicken
is cooked, around
4-5
minutes
.
Add the sauce and bring to the boil. Simmer for
1
minute
. Add the
chilli
now.
Serve with the
rice
and
mangetout
.
