Preheat the oven to

Peel the
potatoes
and cut into
1
" dice. Place on a baking tray and pour over oil. Season with salt and distribute the oil evenly using your hands. Place in the oven for
25-30
minutes
or until the
potatoes
are brown.
While the
potatoes
are cooking, combine the ingredients for the dressing in a bowl and set aside.
Heat a little oil in a frying pan and fry the bacon until it is crispy. Once cooled, cut into pieces and set aside.
Pour the
Cajun seasoning
into a shallow dish. Place the
chicken breasts
in the dish and coat evenly with the seasoning.
Pan roast the
chicken breasts
, then leave to cool a little before cutting into thin strips.
Mix the
salad
in a large bowl with the bacon,
avocado
and the
spring onions
.
When the
potatoes
are cooked, drain any excess oil and mix with the
salad
.
Arrange the
salad
on individual plates. Arrange the chicken on top of the
salad
. Drizzle the dressing over the top of each plate.
