CajunCajun chicken salad with bacon and potatoes

1. Preheat the oven to 200°C/gas 7.
2. Peel the potatoes and cut into 1" dice. Place on a baking tray and pour over oil. Season with salt and distribute the oil evenly using your hands. Place in the oven for
   25-30 minutes or until the potatoes are brown.
3. While the potatoes are cooking, combine the ingredients for the dressing in a bowl and set aside.
4. Heat a little oil in a frying pan and fry the bacon until it is crispy. Once cooled, cut into pieces and set aside.
5. Pour the Cajun seasoning into a shallow dish. Place the chicken breasts in the dish and coat evenly with the seasoning.
6. Pan roast the chicken breasts, then leave to cool a little before cutting into thin strips.
7. Mix the salad in a large bowl with the bacon, avocado and the spring onions.
8. When the potatoes are cooked, drain any excess oil and mix with the salad.
9. Arrange the salad on individual plates. Arrange the chicken on top of the salad. Drizzle the dressing over the top of each plate.
