This recipe is a traditional Ethiopian stew, with a rich sauce that's really fragrant and satisfying.

Ingredients

  • 4 chicken legs
  • 750 g mixture of potatoes (any type) and carrots, peeled and cut into bite-size pieces (any type)
  • 1 large onion, finely chopped
  • ½ lemon
  • 50 g butter
  • 4 eggs (any size), optional
  • 2 tbsps tomato puree
  • Salad and bread, to serve
Niter kibbeh blend
  • 2 cloves garlic, finely chopped
  • 1 tbsp ginger, finely chopped
  • 1 sprig each thyme and rosemary
Berbere
  • 1 tbsp paprika
  • 2 tsp curry powder
  • ½ tsp chilli powder
  • ½ tsp mixed spice
Potato spices
  • ¾ tsp turmeric
  • ½ green chilli, seeds removed, finely chopped
