ItalianFlorentine chicken bake
Florentine dishes tend to have lots of spinach in them and are often topped with mozzarella, so this bake fits the brief nicely. Gluten-free: use GlutenFree pasta and stock cube and GlutenFree plain flour in the sauce.

Ingredients
- 3 mugs pasta
- 1 tbsp olive oil
- 3 chicken breasts, cut into bitesized pieces
- 2 tbsp plain flour
- 1 mug water
- 1 chicken stock cube
- 2 tbsp sun-dried tomato puree
- 100 g cream cheese
- 250 g spinach, roughly chopped
- 250 g mozzarella cheese
- ½ mug grated Parmesan
