outer layers discarded and centre chopped finely

pork
in a bowl and stir in the
ginger
and chopped
lemon grass
. Season with salt and pepper. Shape the mixture into

burgers and chill for about
20
minutes
Heat the
oil
in a large, non-stick frying pan and add the burgers. Fry for
3-4
minutes
on each side over a gently heat, until cooked through. Remove from the pan with a metal spatula and drain on kitchen paper, then serve with sliced tomato, lettuce and chilli sauce.
