Mackerel in curried couscous salad


Smoked mackerel has a strong, distinct flavour. You can buy it vacuum packed and cooked, so no need to have a strong fish smell in the kitchen. Unopened, it will keep in the fridge for ages, so very handy.

  • 2 tsp rogan josh curry paste
  • 2 mugs boiling water
  • 1 mug couscous
  • 50 g sultanas
  • 250 g smoked mackerel fillets, skinned and flaked
  • 4 spring onions
  • ½ red pepper, chopped
  • 2 tomatoes, chopped
  • 1 tbsp coriander, freshly chopped
  • ½ cucumber, diced
  • juice of lemon
