Mackerel in curried couscous salad
Smoked mackerel has a strong, distinct flavour. You can buy it vacuum packed and cooked, so no need to have a strong fish smell in the kitchen. Unopened, it will keep in the fridge for ages, so very handy.

Ingredients
- 2 tsp rogan josh curry paste
- 2 mugs boiling water
- 1 mug couscous
- 50 g sultanas
- 250 g smoked mackerel fillets, skinned and flaked
- 4 spring onions
- ½ red pepper, chopped
- 2 tomatoes, chopped
- 1 tbsp coriander, freshly chopped
- ½ cucumber, diced
- juice of lemon
