Melting meatball macaroni


This recipe has all the elements of comfort food: beef and pork meatballs with an oozing cheesy filling, a rich tomato sauce and pasta

  • 300 g pork mince
  • 400 g beef mince (with around 10% fat)
  • ½ tsp fennel seeds
  • ½ tsp chilli flakes
  • 2 tsp dried oregano
  • 200 g taleggio or mozzarella, chopped into small chunks
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, crushed
  • 2 tsp tomato puree
  • 50 ml red wine
  • 2x 400 g cans chopped tomatoes
  • 500 ml passata
  • 3 bay leaves
  • 2 tsp golden caster sugar
  • 400 g macaroni or other pasta shape
  • crusty bread, to serve (optional)
