MexicanPork & chorizo enchiladas


his Mexican one-pot dish is a delicious and easy, make-ahead family meal - serve half and freeze the rest for another day.

Ingredients

  • 1 tbsp olive oil
  • 2 large onions, halved and thinly sliced
  • 3 cloves garlic, chopped
  • 1 tbsp ground cumin
  • 2 heaped tsp smoked paprika
  • 2 tsp cinnamon
  • 2 red chillies, halved deseeded and sliced
  • 500 g pork mince
  • 2x 200 g packs cooking chorizo sausages, removed from their skins
  • 680 g bottle passata
  • 1 pork or chicken stock cube
  • 4 peppers - 2 red and 2 green, deseeded, quartered and sliced
  • 2x 400 g cans borlotti beans, drained
  • 1x 30 g pack coriander, chopped
  • 1x 500 g tub fromage frais (not fat-free)
  • 1 large egg
  • 2x pack of 8 soft corn tortillas
  • 140 g mature cheddar, grated
  • green salad, to serve
