CreolePrawn jambalaya
Jambalaya originates in the Caribbean, but has a strong Spanish influence, quite like a paella. It usually is a mix of chicken, sausage, fish, vegetables and rice. We have missed out the chicken here!. Gluten-free: make sure the chorizo and stock cube are GlutenFree.

Ingredients
- 1½ mugs rice
- 1 tbsp olive oil
- 1 onion, chopped
- 1 clove garlic, chopped
- ½ green pepper, chopped
- 100 g diced chorizo
- 1 tsp chilli powder
- 1 tsp turmeric
- 6 tomatoes, chopped
- ½ mug water + 1 chicken stock cube
- 350 g cooked prawns
- 1 tbsp freshly chopped coriander
