Red Thai salmon curry

You can easily experiment 5 May 202with this curry to suit your mod. Swap the Thai red curry paste for green or yellow, and the salmon for white fish or prawns.

1 tsp vegetable or sunflower oil
1 tbsp Thai red curry paste
1 onion, sliced
250 ml reduced fat coconut milk
2x 250 g skinless salmon fillets, cut into chunks
200 g trimmed green beans
plain rice, to serve

Heat the slow cooker if necessary. Warm the oil in a large pan, then add the curry paste. Stir in the onion, then cook gently for about until softened.
Transfer the onion to the slow cooker pot with the coconut milk, salmon chunks and beans. Cook on low for until the fish flakes easily and the beans are cooked but have a little crunch. Serve with plain rice.
