  • 2 tbsp extra-virgin olive oil
  • 1 small onion, finely chopped
  • 3 large cloves garlic, finely chopped
  • 600 g fresh tomatoes, deseeded and roughly chopped
  • 50 g pitted green olives in brine, sliced
  • 1x 30 g pack flat-leaf parsley, finely chopped
  • 30 g fresh white breadcrumbs
  • 30 g Italian-style hard cheese or Parmesan, finely grated
