  • 8 large good-quality, herby pork sausages
  • 1 bay leaf
  • Salt and freshly milled black pepper
  • 175 g Puy lentils
  • 1 large onion, chopped small
  • 2 cloves garlic, crushed
  • 25 g butter
  • 2 tbsp groundnut or other flavourless oil
  • 400 g tinned chopped tomatoes
  • 1 tsp granulated sugar
  • 1 tbsp chopped fresh thyme
