ItalianSicilian lamb with noodles

Ingredients

- 1 kg ripe tomatoes, halved
- 2 red peppers, deseeded and chopped
- 2 cloves garlic, peeled
- 5 tbsp olive oil
- 1 kg lamb fillet, trimmed of fat and cut into 2 cm slices
- 1x 500 g pack egg pappardelle
- 5 tbsp chopped fresh mint
- 50 g pine nuts, toasted
- 2 tbsp chopped fresh parsley
