  • 1 kg ripe tomatoes, halved
  • 2 red peppers, deseeded and chopped
  • 2 cloves garlic, peeled
  • 5 tbsp olive oil
  • 1 kg lamb fillet, trimmed of fat and cut into 2 cm slices
  • 1x 500 g pack egg pappardelle
  • 5 tbsp chopped fresh mint
  • 50 g pine nuts, toasted
  • 2 tbsp chopped fresh parsley
