Speedy pork bolognese
The prep for this is so quick - just pop everything in and let the food processor do all the work. If you don't have a food processor, just chop everything finely. Gluten-free: use gluten-free pasta and stock cube.

- 1 onion
- 2 sticks celery
- 1 carrot
- 1 red apple, cored
- 1 clove garlic
- 2 tbsp olive oil
- 500 g minced pork
- 500 g passata
- 1 veg stock cube
- 1 tbsp sun-dried tomato puree
- spaghetti or pasta
- 2 tbsp freshly chopped parsley
- Parmesan to serve
