Black bean chilli

- 2 tbsp olive or rapeseed oil
- 4 cloves garlic, finely choppped
- 2 large onions, chopped
- 3 tbsp sweet pimenton or mild chilli powder
- 3 tbsp ground cumin
- 3 tbsp cider vinegar
- 2 tbsp brown sugar
- 2x 400 g cans chopped tomatoes
- 2x 400 g cans black beans, drained and rinsed
- boiled long grain rice, plus some, or one, of the following toppings, to serve: crumbled feta, chopped spring onions, sliced radishes, avocado chunks
