A colourful stir fry, combining sweet pineapple with vegetables for a lovely contrast of flavours and textures.

Ingredients
- 1 tbsp vegetable or rapeseed oil
- 1 clove garlic, finely chopped
- 4 boneless skinless chicken breasts, cut into bite-sized pieces
- 1x 227 g can pineapple chunks in natural juice
- 2 carrots, cut into thin sticks
- 1 tbsp cornflour
- juice 1 lemon
- 2 tbsp tomato puree
- 3 tbsp light soy sauce
- 1 bunch spring onions, trimmed and cut into lengths
- rice or noodles, to serve
