Linguine with ham and mascarpone

Mascarpone cheese masquerades as cream in this simple yet delicious recipe. Its thick, unctuous consistency makes it perfect for sauce which cling beautifully to the pasta.

25 g butter
150 g mascarpone
90 g cooked ham, cut into thin strips
30 ml milk
3 tbsp Parmesan cheese, freshly grated , plus extra to serve
500 g fresh linguine
salt and ground black pepper

Melt the butter in a medium pan, add the mascarpone, ham and milk and stir well over a low heat until the mascarpone as melted. Add 1 tbsp of the grated Parmesan and plenty of pepper and stir well.
Cook the pasta in a large pan of lightly salted boiling water for about .
Drain the cooked pasta well and tip it into a warmed bowl. Pour the sauce over the pasta, add the remaining Parmesan and toss well.
Taste for seasoning and serve the pasta immediately, with more ground black pepper and extra grated Parmesan.
