Penne boscaiola

'Boscaiola' is Italian for 'woodcutter' or 'lumberjack'. He would typically gather the mushrooms from the woods. This is a classic Italian dish which contains mushrooms, bacon and a creamy pasta. Gluten-free: use gluten-free pasta.

1. Cook the pasta in a pan of boiling, salted water. Drain and return to the pan until needed.
2. Heat the oil in a large saucepan or wok. Fry the bacon until it begins to brown.
3. Add the onions and the mushrooms and fry for
   2-3 minutes.
4. Add the cream and parmesan and season to taste. Bring to the boil.
5. Add the pasta and the chopped basil and serve immediately.
