Tagliatelle with goat's cheese

Mushrooms add a deliciously nutty flavour and juicy texture to this veggie-friendly pasta.

Slice the mushrooms and finely chop the onion and garlic. Cook the pasta in plenty of salted boiling water according to the packet instructions.
Heat the butter and oil in a frying pan until the butter has melted. Add the onion and cook until golden, about . Stir in the garlic and mushrooms and cook, stirring, until the mushrooms are golden brown.
Drain the pasta reserving 4 tablespoons of the water. Return the pasta to its pan with the water and stir in the mushrooms mixture. Roughly break the goat's cheese into pieces and gently stir it into the pasta so it starts to melt. Serve sprinkled with black pepper, a drizzle of olive oil and a few shavings of Parmesan.
