Salad dressing

juice of 1 lime

Mix the marinade ingredients together in a bowl. Add the
chicken
and leave overnight in the fridge. If you do not have time to do this,

hour
will be OK.
Mix the salad dressing in a small bowl or mug and set to one side until neeed.
Heat a little
oil
in a wok. Take the
chicken
pieces from the marinade and stir fry on a high heat for
2-3
minutes
. The
chicken
will cook quite quickly as it is in small pieces.
Divide the salad between the plates. Sprinkle the dressing over and serve the
chicken
on top of the salad.
