Mango chicken salad
Super quick and easy recipe. The curry paste is not too spicy for children to try. If you want, you can add more spice to taste, but not too much or you will drown the other more subtle flavours. Gluten-free: make sure the curry paste is gluten-free.

Ingredients
- 3 chicken breasts, cut into strips
- 1 tbsp mild curry paste
- juice of lemon
- 1 tbsp olive oil
Dressing
- 1 tbsp olive oil
- 150 ml natural yoghurt
- 1 tbsp mango chutney
- 100 g watercress
- ½ cucumber, cut into thing strips
- 6 spring onions, sliced
- 1 medium cos lettuce, sliced
- 1 ripe mango, peeled and cut into slices
