Pasta amatriciana

Amatriciana is a classic Italian dish. It usually has bacon, tomato and basil, but here we have replaced the bacon with pancetta, which makes it a bit simper to make. Gluten-free: use gluten-free pasta and stock cube.
Ingredients

olive oil

onion , chopped

cloves
garlic , finely chopped

pancetta lardons

tomatoes , roughly chopped
½
fat red chilli

tomato puree

mug
water

vegetable stock cube

tbsp
freshly chopped basil

mug
grated Parmesan cheese
Instructions
Cook the pasta . Once cooked, drain and return to the pan.
Meanwhile, heat the oil in a wok or large frying pan and add the onion and garlic . Fry until they begin to soften.
Add the pancetta lardons to the pan and fry until they begin to brown.
Add the tomatoes , chilli , tomato puree , water and stock and bring to the boil. Turn down and simmer for 5 minutes .
Add the pasta , basil and Parmesan and mix.
Serve immediately.
