Italian cod and bacon stew

Italian fish stew with a hint of spice. Find some good crusty bread to serve with this dish. Gluten-free: make sure the fish stock cubes are GlutenFree.
Ingredients

olive oil

red pepper , chopped
4
slices streaky bacon , chopped
6
spring onions , chopped
6
tomatoes , roughly chopped

cloves
garlic , finely chopped
2
tsp
paprika

pinch
saffron

g
cannellini beans , drained and washed
1
mug
of water + 1 fish stock cube
4
cod steaks , cut into bite sized pieces

tbsp
coriander , freshly chopped
Crusty bread , to serve
Instructions
Heat the oil in a large pan or wok. Add the pepper and bacon and fry until brown. Season well with salt and pepper .
Add the spring onions , tomatoes and garlic and fry for 1 minute .
Add the paprika , saffron , beans , water and fish stock and bring to the boil. Add the cod and simmer gently for 3-4 minutes ,or until the cod is cooked.
Stir in the coriander and serve with crusty bread.
