Spicy, sweet, sour and salty – typical flavours of South-east Asia. This makes a great dipping sauce or dressing.

- 50 g caster sugar
- 2 tbsp water
- 5 tbsp malt vinegar
- 5 tbsp light soy sauce
- pinch sea salt
- ½ red chilli, deseeded and finely chopped
- 3 sprigs coriander, stalks removed and leaves finely chopped
