Spicy vinegar


Spicy, sweet, sour and salty – typical flavours of South-east Asia. This makes a great dipping sauce or dressing.

  • 50 g caster sugar
  • 2 tbsp water
  • 5 tbsp malt vinegar
  • 5 tbsp light soy sauce
  • pinch sea salt
  • ½ red chilli, deseeded and finely chopped
  • 3 sprigs coriander, stalks removed and leaves finely chopped
