Vegetable tagine
Add some Moroccan flare to your mealtimes with this delicious tagine. Dried fruit is often used in this dish to offset the spices.

Ingredients
- 1 large onion, peeled and finely chopped
- 2 cloves garlic, peeled and crushed
- 1 tsp finely grated fresh root ginger
- 2 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp ground cinnamon
- 1 tsp ground turmeric
- 1 tsp dried chilli flakes
- 1x 400 g can chopped tomatoes
- ½ tsp artificial sweetener
- 250 ml water or stock
- 2 carrots, peeled and cut into bite-sized pieces
- 200 g baby courgettes, cut into 2 cm slices
- 250 g baby aubergines, halved lengthways
- 200 g baby turnips, trimmed and scrubbed
